With walleye and northern pike season now open in Minnesota and fishing in full swing across North Dakota, these recipes from Kris Winkelman of Babe Winkelman Productions are worth checking out if you're looking for different ways to prepare that catch of the day.

Walleye Fun Bun

1½ cup walleye fillets (cooked and flaked)

1 medium red onion (finely chopped)

1 egg beaten or ¼ cup of egg beaters

1½ to 2 cups cheese (shredded)

½ cup celery (chopped)

Salt and pepper to taste

Dill to taste

Hoagie or hamburger buns

Mix all ingredients together and spoon on buns, wrap buns in foil and bake at 350 degrees for 10 to 12 minutes or place on grill.

Prep time: 10 minutes.

Cook time: 12 minutes.

Main ingredients: Walleye, cheese, buns.

Grilled Pike Fillets

Butter

½ onion (sliced)

3 cloves garlic (minced)

1 T capers

1 T caper juice

1 cup cherry tomatoes (sliced)

1/3 cup green olives (sliced)

1 fresh jalapeno pepper (sliced and seeded)

2 t fresh oregano

½ t cayenne pepper

2 limes

4 pike fillets (cut in bite-size pieces)

Place butter, onions, garlic, capers, tomatoes, green olives, jalapeno, oregano, pepper and juice from limes into pan and sauté. Push aside. Add fish in same pan and cook until it flakes. Serve vegetables with fish over it.
