Joe Hanson doesn't shuck his sweet corn. He throws it on the grill in the husk.
He's one of several area chefs I have been asking about the way they like to eat corn. Joe, who is a chef at Sanders 1907, says he learned from his boss, Kim Holmes, not to shuck the corn but to soak it in water for about an hour and then throw it on the grill. It takes about a half-hour, and you burn the husk. Then, you strip the corn out and slather it with plain butter, salt and pepper along with a little chipotle and anchovy. That's because Joe likes it just a teeny bit hot.
Grilled corn, Joe says, is awesome.
I got a similar response from Cory Campbell, chef at Grand Forks Country Club. He peels back the husks and sprinkles the corn with fresh ginger and butter and rolls it back up. He ties them up and grills them about 15 minutes.
Nate Sheppard, kitchen manager at the Blue Moose, sticks to the basics with corn. He uses unsalted butter, freshly cracked black pepper and salt. He suggests wrapping up the ears of corn in foil and adding cilantro and red chili flakes before putting it on the grill.

Ryan Holland, meat manager at Hugo's on South Washington Street, concedes he probably eats too much butter during corn season. He likes to put a stick of butter in a bowl and roll the corn on it. "Just lather it up," he says, "with a lot of butter, pepper and salt."

A. It's the Driveway Basketball League that has been running steadily all summer on the driveway of the John and Jan Lee home at 698 Evergreen Drive in Grand Forks. Tournaments are winding up today because the Red River High School hoops players and wannabe players involved are getting ready for back to school and going off to college. The two-on-two games have been running for weeks on the driveway of the three-car garage. The flag flies over the scene.
