The following is a recipe sent to me from a reader in Aneta, N.D. I've always wanted a good beet pickle recipe and this sounds like it will be one. How interesting it is with the apples in it. If you have any beets left, you'll probably want to try it right away. I bet this is one of those that all the friends and neighbors rave about:

Mrs. Ward's Pickled Beets

3 pounds beets, cooked, skins slipped off and cut into ¼ inch slices (6 cups)

6 large apples, cored and cut into ¼ inch slices

2 large purple onions, skinned and cut into ¼ inch slices

4 inches cinnamon stick, broken into smaller pieces

1 ½ cups dark brown sugar

1 ½ cups apple cider vinegar

½ cup water

¼ teaspoon cloves

Dash of nutmeg

2 teaspoons salt

In large stainless steel kettle, combine all ingredients. Bring to a boil, then reduce heat, cover and simmer 20 minutes, stirring often.

Ladle into hot, clean pint jars,* leaving ½ inch headroom, Wipe jar rim with clean, damp cloth, adjust lids on jars.

Process jars in boiling water bath for 20 minutes. (Start timing when water returns to boil.)

Recipe makes 5 pints.

*Have lids and jars ready according to manufacturer's directions.
