Fish with Pico Garlic Rub
RUB:
2 tablespoons garlic powder
2 tablespoons parsley
1 teaspoon paprika

1 teaspoon ground chipotle chili
½ sea salt
FISH:
1½ pounds tilapia fillets
½ cup all-purpose flour
2 tablespoons extra-virgin olive oil
1 lime wedge
Mix rub ingredients in a medium bowl. Set aside.

Coat fish with flour. Heat 2 tablespoons olive oil in a skillet on medium heat. Place fish in skillet; cook for 3 to 4 minutes. Turn and brush on the garlic rub. Cook 3 to 4 minutes.
Remove fish from skillet and squeeze lime juice over all. Serve immediately.

Angel Hair with Smoked Salmon
in Tomato-Herb Sauce
6 ounces smoked salmon, thinly sliced
8 ounces angel hair (capellini) pasta

3 tablespoons olive oil
2¼ cups seeded and chopped tomatoes, divided
½ cup white wine
3 tablespoons capers, drained
1½ teaspoons sweet basil
½ teaspoon Italian herb seasoning
¼ teaspoon garlic powder
½ cup freshly grated Parmesan cheese

Cut smoked salmon, with the grain, into ½-inch wide strips; reserve. Cook pasta as package directs; drain.
Meanwhile, heat oil in a large skillet over medium-high heat. Add 2 cups tomatoes, wine, capers, basil, Italian herbs and garlic powder. Cook until mixture is hot, about 5 minutes.
Toss cooked pasta and tomato mixture. Add smoked salmon and cheese; toss gently. Garnish with remaining tomatoes and parsley, if desired.
Yield: Serves 4.

Black 'n' Spicy Fish
1½ teaspoons garlic salt
1 teaspoon paprika

1 teaspoon onion powder
1 teaspoon oregano
1 teaspoon fine-grind black pepper
½ teaspoon cayenne pepper
½ teaspoon ground thyme
2 pounds fish (salmon, tuna, swordfish steaks, or firm fillets may be substituted)
Combine garlic salt, paprika, onion powder, oregano, black pepper, cayenne pepper and thyme. Rub mixture on both sides of fish. Heat a large cast iron skillet over medium high heat. Spray skillet with nonstick cooking spray and add fish. Cook 8 to 10 minutes on each side, or until fish flakes easily with a fork.
Note: Cooking times may differ depending on the thickness of the fillet or steak.
