With only six ingredients, this entree is easy to make.
Super Easy Beef Chili
1 tablespoon canola oil
1 large onion, peeled, chopped
1½ pounds ground beef

2 cups bloody Mary mix
2 14-ounce cans diced tomatoes with green chilies
2 14-ounce cans kidney beans, drained and rinsed well
4 tablespoons chili powder, divided
In medium pot, heat oil. Add onion. Saute until it becomes lightly golden brown. Add beef; cook until brown. Stir in bloody Mary mix. Heat on medium-high, stirring, scraping up browned bits on pan's bottom. Add tomatoes, beans, 2 tablespoons of chili powder. Stir. Bring to boil; reduce heat to simmer. Cover slightly, simmer 30 minutes. Before serving, stir in remaining chili powder. Serve with desired toppings.
Yield: Serves 8.
