If you follow this simple recipe carefully, you'll be in for a treat.

Shrimp Scampi with Linguine

2 tablespoons olive oil

2 large garlic cloves, sliced thin (or more to taste)

4 green onions, chopped fine

1 cup dry white wine

2 cups half-and-half

2 tablespoons chopped parsley plus more for garnish

3 pounds medium shrimp, shelled and deveined

1 pound linguine, cooked al dente

In saucepan, heat oil over medium-high heat. Saute garlic, onions 2 minutes. Add wine. Cook, stirring, until liquid is reduced by half. Add half-and-half. Bring to boil. When sauce has thickened, add parsley, shrimp. When shrimp turns pink, reduce heat, add linguine. Cook enough for pasta to warm. Toss to avoid burning. Garnish with parsley.

Yield: Serves 8.
