Rice pilaf is one of those foods that have been around for a long time and go with many disshes. The following recipe is easy to make and can be supplemented with a number of garnishes or spices to create other dishes.
Rice Pilaf
1 tablespoon extra-virgin olive oil or butter
½ cup chopped onions
1 cup jasmine or basmati rice

1½ cups vegetable broth
2 bay leaves
Salt and fresh-ground black pepper, to taste
Heat oil or butter in small saucepan with tight-fitting lid over medium-high heat. Add onions. Saute 3 minutes until soft. Add rice. Continue to saute until rice is coated well with oil or butter. Add broth (or water), bay leaves, salt and pepper; bring to simmer. Cover. Regulate heat so liquid simmers. Cook until liquid is absorbed and rice is tender.
Yield: Serves 4.
