Here's a different spin on an old favorite.
New-Fashioned Grilled Cheese Sandwiches
1 tablespoon butter
2 teaspoons Dijon mustard
4 slices bread

2 teaspoons regular or reduced-fat mayonnaise
4 slices cheese (such as 2 sharp Cheddar and 2 Swiss)
4 thin slices tomato
6 thin slices avocado
Melt butter in 12-inch skillet over low heat. As butter melts, spread 1 teaspoon mustard on each of 2 slices of bread. Spread 1 teaspoon mayonnaise on each of 2 remaining slices. Place 2 slices of cheese on each of 2 slices of bread. Place cheese-topped bread, cheese side up, in skillet. Cover. Cook until bread is golden brown on bottom and cheese is just beginning to melt. Arrange 2 slices of tomato and 3 slices of avocado on top of cheese. Place another piece of bread on each sandwich. Flip sandwiches, pressing each with spatula. Cook, uncovered, until second side is golden brown. Continue to press sandwiches with spatula. Transfer sandwiches to plates and cut in half.
Yield: Serves 2.
