Jam Surprise Muffins

2 cups all-purpose flour

3 tablespoons sugar

1 tablespoon baking powder

½ teaspoon salt

¾ cup butter, softened

1 egg

1 cup milk

Nonstick vegetable spray

½ cup favorite-flavor jam

In mixing bowl, combine flour, sugar, baking powder, salt. Blend in butter with fork or pastry cutter until mixture is crumbly. Form well in center. In separate bowl, whisk together egg, milk; pour into well of dry ingredients. Stir until ingredients are just moistened. Batter will be lumpy. Spray 12-cup muffin tin with nonstick vegetable oil; lightly dust with flour. Fill muffin cups about 1/3 full of batter. Spoon 1 tablespoon jam on top of batter; top with enough batter to fill muffin cups 2/3 full. Bake at 425 degrees for 20 to 25 minutes. Use toothpick test to see if your muffins are finished baking.

Yield: 12 muffins.
