Grilled sausage would be a nice touch for a pizza topping.

Grilled Sausage and Onion Pizza

2 fresh, hot Italian sausages

1 tablespoon olive oil

1 Spanish onion, halved and thinly sliced

1 14-ounce baked pizza crust (such as Boboli)

1 cup diced fontina cheese

Build charcoal fire. Let briquets ash over or heat gas grill to medium. Grill sausages until cooked through. Cut into ¼-inch slices. Set aside. Heat oven to 450 degrees. Heat oil in large saute pan over medium heat. Add onions. Cook, undisturbed, for 3 to 5 minutes. Stir. They should begin to caramelize. Continue to cook, undisturbed, for 3 to 5 minutes. Stir. Repeat until onions are even dark golden brown. Cool on plate. Place crust on baking sheet. Build pizza starting with sausage, then onions, finishing with cheese. Bake until crust is crisp and cheese is bubbly. Cool in pan 5 minutes. Cut into wedges.

Yield: Serves 4.
