Flat bamboo skewers

Combine sugar and coconut milk in heavy saucepan. Bring to boil over medium heat, whisking to dissolve sugar. Simmer briskly until thick, golden and very flavorful, whisking often. Remove from heat. Let sauce cool to room temperature. Place in deep bowl. Heat grill to high. Brush and oil grill grate. Peel bananas. Skewer them through one end. Grill bananas until they are lightly browned and partially cooked. Dip bananas in coconut-caramel sauce (or brush it onto on all sides) and return them to grill. Continue to grill bananas until they are darkly browned and sizzling. A bamboo skewer should easily pierce the banana. Transfer to platter or bowl. Spoon remaining sauce on top and serve.

Yield: Serves 4.
