Here is a spirited recipe for summer entertaining.
Chocolate-Chambord Sorbet
4 cups water
1 cup sugar
½ cup cocoa powder

Pinch salt
8 ounces dark chocolate, chopped
¾ cup Chambord (raspberry-flavored liqueur)
Heat water, sugar, cocoa powder and salt in medium saucepan over low heat. Whisk ingredients together. Raise heat to medium. Bring mixture to boil. Remove pot from heat. Add chopped chocolate and Chambord. Stir to dissolve chocolate. Pour mixture into heat-proof container. Allow to cool at room temperature, stirring occasionally. Do not chill mixture or you will have grainy final product. Mixture may be made day before and left covered on kitchen counter. Pour mix into ice cream machine and follow manufacturer's instructions.
Yield: 1½ quarts.
Approximate nutritional analysis per ½-cup serving: 224 calories, 9 grams fat, no cholesterol, 37 grams carbohydrates, 3 grams fiber, 2 grams protein, 22 milligrams sodium.
