Are you stumped for a dinner plan that will satisfy everyone? Consider the following from "Sara Moulton's Everyday Family Dinners."

Cheesy Pork Tenderloin

1 pork tenderloin, trimmed (1 to 1¼ pounds)

½ cup seasoned Italian bread crumbs

1 ounce Parmesan, grated

1 egg

3 tablespoons extra-virgin olive oil, divided

Lemon wedges for garnish

Slice pork diagonally at 45-degree angle into 8 pieces, each about ¾-inch thick. Combine bread crumbs and cheese in bowl. Lightly beat egg with 1 tablespoon water in another bowl. Dip pork into beaten egg, letting excess drip off, then into bread crumbs, packing crumbs on all sides. Heat 1½ tablespoon olive oil in skillet over high heat. Reduce heat to medium. Add pork pieces. Cook for 3 minutes. Turn Slices. Add rest of oil to pan. Cook until pork is golden. Remove from heat. Let pork stand in pan for 5 minutes. Serve with lemon wedge.

Yield: Serves 4.
