Blueberry Pancakes

1 tablespoon butter

Cooking spray

1 large whole egg

1 large egg white

½ cup flour

½ cup skim milk

1 teaspoon vanilla extract

1 tablespoon sugar

½ teaspoon ground nutmeg

½ teaspoon salt

1 cup fresh blueberries

½ fresh lemon

¼ cup confectioners' sugar

Position rack in lower third of oven, preheat to 425 degrees. Add butter, 5-second spray of cooking oil to 9-inch pie pan; put in oven to melt butter. In bowl, whisk whole egg, white then flour, milk, vanilla, sugar, nutmeg, salt. Stir in berries. Pour in preheated pan. Return to oven. Bake 15 to 20 minutes, until edges are puffed, golden brown. Remove from oven; squeeze lemon juice over pancake, sift confectioners' sugar over all. Cut in wedges. Serve.

Yield: Serves 6.
