Two popular condiments can add flavor and protection to salmon.

Baked Mustard-Mayo Fish Steaks

2 tablespoons each: mayonnaise, mustard

3 to 6 fresh tarragon leaves, minced

½ teaspoon each: salt, black pepper

4 salmon steaks, 6 to 8 ounces each

Lemon wedges

Heat oven to 375 degrees. Mix mayonnaise and mustard in small bowl; stir in tarragon, salt and pepper. Spread mixture on both sides of steaks. Place fish on baking sheet. Bake salmon, turning once halfway through cooking, 8 minutes. Put steaks under broiler to brown, 1 minute. Serve with lemon wedges.

Yield: Serves 4.
