Chef Jeff - Recipes - MEN GONE WILD: Catfish Italian Style
Catfish Italian Style1 to 1½ pounds catfish, cut into bite-size pieces
¾ cup butter
1 medium clove garlic
8 ounces fresh mushrooms (sliced)
½ cup dry white wine or chicken broth
2 tablespoons lemon juice
¼ cup fresh parsley
16 ounces spaghetti (cooked and drained)
½ cup Parmesan cheese
Salt and pepper to taste
In a large pan, melt butter over medium heat. Cook mushrooms and garlic for 5 minutes. Add wine or broth, lemon juice, parsley, salt and pepper. Cook for about 3 minutes, stirring occasionally. Add catfish, simmer uncovered until fish flakes with a fork. Sauce will be thin. Serve over spaghetti noodles. Source: www.winkelman.com.
