Chef Jeff - Recipes - MEN GONE WILD: Stuffed Fish
Stuffed Fish¼ cup chopped onion
¼ cup butter
1 3-ounce can chopped mushrooms (reserve liquid)
1 7½-ounce can crabmeat, drained
½ cup coarse cracker crumbs
2 tablespoons parsley
½ teaspoon salt
Dash pepper
2 pounds fish fillets
3 tablespoons butter
3 tablespoons flour
Milk
4 ounces shredded Swiss cheese (1 cup)
½ teaspoon paprika
½ cup wine
Preheat oven to 400 degrees. In skillet, cook onion in the ¼ cup butter until tender. Take off heat, stir in mushrooms, flaked crabmeat, cracker crumbs, parsley salt and pepper.
Spread mixture over fillets. Roll fillets and place seam side down in baking dish. Add enough milk to mushroom liquid to make 1½ cups.
In saucepan, melt 3 tablespoons butter and add 3 tablespoons flour. Add milk mixture and cook until thick. Add wine. Pour mixture over fillets.
Bake at 400 degrees for 25 minutes. Sprinkle with cheese and paprika. Bake 10 minutes longer or until fish flakes easily with fork.
