Fish Chowder

1 onion, chopped
½ cup butter
4 cups diced raw potatoes
½ teaspooon basil
2 teaspoons salt
1/8 teaspoon pepper
2 cups water
1 pound frozen fish (northern, walleye, trout or panfish)
1 cup evaporated milk
Saute onion in butter until golden. Place onion in saucepan with potatoes, spices and water. Cut fish into 2-inch chunks. Place on top of mixture in pan. Cover and simmer 15 minutes. Add milk. Stir gently. Cover and heat to boiling point. Serve.
