Duck a la Orange1 4- to 5-pound duckling
Salt
Pepper
2 cloves garlic, crushed
Pinch ground ginger
Pinch thyme
Pinch paprika
1 onion, sliced
1 stalk celery, chopped
1 carrot, sliced
Wash and dry duck. Rub inside and out with salt, pepper, garlic, ginger, paprika and thyme. Place onion, carrot and celery inside cavity. Place breast down on a rack in a roaster, cover and roast at 425 degrees for 15 minutes.
