CHEF JEFF -- ONE BYTE AT A TIME: Baked Sweet Onion and Cheese Dip
It's all right to splurge occasionally, and this sweet onion and cheese dip definitely is an indulgence that is worth trying.
Baked Sweet Onion and Cheese Dip
2 cups shredded Swiss cheese
2 cups chopped Vidalia or other sweet onion
2 cups mayonnaise
2 tablespoons Parmesan cheese
Heat oven to 325 degrees. Stir cheese and onion into mayonnaise. Spoon into a lightly buttered 2-quart baking dish. Sprinkle with Parmesan, and bake, uncovered, 40 to 45 minutes. Serve with crackers.
Yield: Serves 24.
Note: Add a few drops of pepper sauce or stone-ground mustard to kick this up a notch.
