For some restaurants, it’s not easy being green
Diabetic Chef teaches restaurateurs not to be afraid to put a little green on the menu
What meal appears healthier: tater tot hotdish or an oriental salad? Well, reality doesn’t always match appearances, at least not in the case of two local restaurateurs’ offerings. Chris Smith, known as The Diabetic Chef, made that case Tuesday during the second of a two-day stay in Roseau to teach locals how to eat healthier. Local restaurant cooks were the students Tuesday.

Iraq emerges from war a society divided by sect
Hurriyah — the name means “freedom” in Arabic — is symptomatic of much of Iraq: far quieter than at the height of the war but with an uneasy peace achieved through intimidation and bloodshed. The number of Iraqi neighborhoods in which members of the two Muslim sects live side by side and intermarry has dwindled.

Local charities say needs growing though jobs plentiful
They cite rising cost of living, new clients from other areas
The jobless rate is 4 percent, yet Grand Forks area charities are seeing more clients. Groceries and gas are more expensive, and charities say the working poor can’t always keep up. And the area’s healthy economy is attracting many jobless from economically depressed areas, but the new arrivals don’t always have the skills or documentation to get jobs, says the head of the local homeless shelter.

Ethanol eats too much corn, livestock farmers complain
The amount of corn consumed by the ethanol industry combined with continued demand from overseas has cattle and hog farmers worried that if corn production drops due to drought or another natural disaster, the cost of feed could skyrocket, leaving them little choice but to reduce the size of their herds. A smaller supply could, in turn, mean higher meat prices and less selection at the grocery store.

UPDATE: Georgia soldier claims he was predatory lending victim
A Georgia-based soldier is suing a business that loaned him $4,100 at high interest, saying the terms violated a 2007 federal law that protects military service members from predatory lenders. Army Staff Sgt. Jason Cox of Fort Benning says the car-title loan he took out last year cost him more than $4,000 in interest alone. He defaulted and the lender repossessed his Dodge Durango.
