Here’s a fun twist on a childhood classic, a lighter version that makes use of whole-wheat, low-carb tortillas, reduced-fat peanut butter and 100-percent fruit spread to cut down on the calories.
Peanut Butter and Jelly Spirals
1 7½-inch, whole-wheat, low-carb tortilla
1½ tablespoon reduced-fat peanut butter
1 tablespoon strawberry all-fruit spread, or your favorite flavor
Heat medium-sized nonstick skillet over medium heat until hot. Place tortilla in skillet. Cook until just warm, about 20 to 30 seconds per side. Place tortilla on cutting board. Spread surface evenly with peanut butter followed by fruit spread. Roll into tube. Slice into 8 equal pieces. Arrange on serving plate, spiral side up. Serve immediately.
Yield: Serves 1.
