This comes from Devin Alexander, author of “The Biggest Loser Cookbook,” is a great option for lunch, snacking or as a hors d’oeuvre.

RBC Roll

1 10-inch, all-natural, sprouted grain tortilla or other 8-inch, all-natural, low-fat, whole-grain tortilla

1 tablespoon all-natural, light, herbed cheese spread

3 ounces nitrate-free, low-sodium, lean roast beef, sliced very thinly

Wedge of cucumber the length of the tortilla

3 chives, cut into 7-inch-long pieces

Put tortilla on cutting board. Spread cheese evenly over it. Cover Xc of cheese with meat. Put cucumber, chives together on edge with meat, opposite cheese-only portion. Roll tortilla tightly, starting by wrapping it around cucumber, chives until you reach other side. Serve immediately or refrigerate until ready to eat.

Yield: Serves 1.

Approximate nutritional analysis per serving: 270 calories, 6 grams fat, 28 grams protein.
