CHEF JEFF — ONE BYTE AT A TIME: Chili Minestrone

Mix up things a bit in this old favorite with vegetables, either frozen or fresh.

Mix up things a bit in this old favorite with vegetables, either frozen or fresh.

Chili Minestrone

1 14½-ounce can diced tomatoes with mild green chilies

1 16-ounce can ranchero beans

1 cup onions, chopped

3 cups frozen mixed vegetables (or fresh, if desired)

½ cup celery, chopped

2 cups low-sodium tomato juice

3 cups water

2 teaspoons sugar

2 teaspoons lime juice

½ teaspoon fresh ground pepper

¼ teaspoon cayenne pepper

½ teaspoons chili powder

½ teaspoon Creole seasoning (or other seasoning mix)

¼ teaspoons red pepper flakes

Combine all the ingredients in a 4-quart or larger slow cooker. Cook on low for at least 6 hours.
