Fresh garden fare makes this side dish a breeze.

Quick Coleslaw

5 teaspoons reduced-fat mayonnaise

¼ cup white vinegar

1 tablespoon Dijon mustard

Sugar substitute equivalent to 1 teaspoon sugar

Salt and fresh ground black pepper

2 cups cabbage, shredded

½ cup carrots, shredded

½ cup red onion, sliced

Mix mayonnaise, vinegar, mustard, sugar substitute and salt and pepper to taste together in a medium-size bowl. Add cabbage, carrot and onion and toss well. Taste for seasoning and add more if necessary.

Yield: Serves 2.

Approximate nutritional analysis per serving: 135 calories, 9 grams fat (1.4 grams saturated), 5 milligrams cholesterol, 2 grams protein, 13 grams carbohydrates, 3 grams dietary fiber, 6 grams sugars, 275 milligrams sodium.
