In an emergency, you can whip this up in no time.
Lazy Day Cake
2 eggs
1 cup sugar
1 cup flour
1 teaspoon baking powder
½ cup milk
1 tablespoon butter
1 teaspoon vanilla
TOPPING:
3 tablespoons butter
2 tablespoons heavy cream
5 tablespoons brown sugar
½ cup dry coconut
Beat eggs until thick, lemon- colored. Add sugar; beat until very thick. Sift flour, baking powder, add to egg mixture. Heat milk, butter to boiling, add to mixture. Stir in vanilla. Pour into greased, floured 9-inch square pan. Bake at 350 degrees for 20 minutes, until toothpick comes out clean. For topping, put ingredients in heavy saucepan. Bring to boil for 3 to 5 minutes. Pour over cake. Place under broiler until topping is brown, bubbly.
Yield: Serves 9.
