If you’re in a hurry, this delicious dessert takes just a few minutes to mix.
Apple Coffee Cake
1 18¼-ounce package yellow, carrot or spice cake mix
3 eggs
½ teaspoon cinnamon if using yellow cake mix
1 21-ounce can apple pie filling
¾ cup packed brown sugar
1 tablespoon all-purpose flour
1 tablespoon butter
1 teaspoon ground cinnamon
1 cup chopped pecans
Heat oven to 350 degrees. Grease, flour 9-by-13-inch baking pan. In bowl, mix cake mix, eggs, cinnamon. Fold in filling. Pour into prepared pan. In small bowl, combine brown sugar, flour, butter, cinnamon, nuts. Sprinkle over top of batter. Bake 35 to 40 minutes, or until toothpick inserted in center comes out clean.
Yield: Serves 24.
Approximate nutritional analysis per serving: 180 calories, 6.6 grams fat (1.1 grams saturated), 25 milligrams cholesterol, 2.2 grams protein, 29 grams carbohydrates, 1 gram fiber, 170 milligram sodium.
