The Wisconsin Cheese Board recommends this for breakfast, but it also would be delicious as an afternoon pick-me-up.

Tiramisu Smoothie

8 ounces mascarpone cheese

1 cup vanilla ice cream

2 tablespoons milk

3 cups chocolate ice cream

1 cup brewed espresso or strong coffee, chilled

4 teaspoons unsweetened cocoa powder

4 teaspoons confectioners’ sugar

4 biscotti

Process cheese, vanilla ice cream, milk in blender until smooth, creamy. Pour into bowl; set aside. Process chocolate ice cream, espresso in blender. Put chocolate mixture into 4 glasses. Top with cheese mixture. Combine cocoa powder, sugar, sift evenly over each glass. Garnish with biscotti. Serve immediately.

Yield: Serves 8.

Approximate nutritional analysis per serving: 328 calories, 63 percent of calories from fat, 24 grams fat (13.4 grams saturated), 82 milligrams cholesterol, 5.6 grams protein, 26 grams carbohydrates, 1 gram fiber, 78 milligrams sodium.
