This would be a great side dish for family get-together.

Pineapple-Lime Gelatin Mold

1 4-serving package lime flavor gelatin

1 4-serving package lemon flavor gelatin

1 cup hot water

½ cup mayonnaise

1 12-ounce can evaporated milk

1 8-ounce can crushed pineapple with juice

1 8-ounce carton cream style cottage cheese

½ to 1 cup chopped pecans (optional)

Dissolve gelatin powders in 1 cup of boiling water. Let stand. Beat mayo with milk, add to gelatin mixture with whisk or beater. Add undrained pineapple, cottage cheese, nuts. Pour into 8-inch square glass dish; place in refrigerator until congealed. Cut into squares.

Yield: Serves 12.

Approximate nutritional analysis per serving: 250 calories, 36 percent of calories from fat, 10 grams fat (2.7 grams saturated), 15 milligrams cholesterol, 7.3 grams protein, 34.2 grams carbohydrates, 0.3 grams fiber, 308 milligrams sodium.
