Baja Coleslaw

½ small head cabbage, washed and finely shredded

2 carrots, peeled, shredded

3 green onions, thinly sliced

1 small sweet bell pepper, diced in ¼-inch pieces

¾ cup natural or golden raisins, divided

½ cup cubed fresh or frozen and thawed mango

½ cup cubed fresh or frozen and thawed papaya

1 tablespoon sugar

3 tablespoons extra virgin olive oil

2 tablespoons fresh lime juice

Chopped cilantro leaves

Combine cabbage, carrots, onions, pepper, ½ cup raisins, mango, papaya in bowl. Mix sugar, oil, lime juice in bowl. Add to vegetables, fruit; mix. Turn into serving bowl, garnish with cilantro, remaining raisins.

Yield: Serves 8.

Approximate nutritional analysis per serving: 135 calories, 5.3 grams fat (0.8 grams saturated), no cholesterol, 1.8 grams protein, 22.7 grams carbohydrates, 3.2 grams fiber, 25 milligrams sodium.
