This quick and easy recipe features a grain that is growing in popularity across the country.

Homemade Spinach Quinoa Mediteraneo

8 ounce quinoa

1 bunch scallions

1 Spanish onion

8 ounce olive oil

1 bunch parsely

1 bunch anise

1 bunch dill

2 teaspoons kosher salt

1 teaspoon black pepper

6 cups water

Saute onions scallions, parsley and anise in olive oil.

Add water and cook for 5 minutes. Add quinoa and cook an additional 15 minutes.

Yield: Serves 4.
