Baked Fish Sandwich with Spicy Mayo
FOR THE SPICY MAYO:
1 cup mayonnaise
3 tablespoons orange juice
1 to 2 teaspoons canned chipotle chilies in adobo sauce
FOR THE FISH:
1 firm, thin fillet (catfish, snapper, tilapia, etc.)
Salt and pepper
Cornmeal
Cooking spray
1 bun
CONDIMENTS:
Leaf lettuce
Tomato, sliced
Mix spicy mayo ingredients. Set aside. Dredge fish fillet it through salt-and-pepper seasoned cornmeal. Spray fish with cooking spray and bake in at 350-degree oven for about 15 minutes, flipping halfway. Serve on bun of your choice spread with the spicy mayo and an ice-cold lettuce leaf and tomato slice. Serve with oven-baked sweet potato fries.
Yield: Serves 1.
