Baked Eggs in Cheese Sauce
2 tablespoons butter
2 tablespoons all-purpose flour
Salt, pepper, nutmeg to taste
1 teaspoon dried mustard
2 cups milk
1¼ cups shredded Cheddar or Monterey jack cheese
2 cups diced, cooked chicken or other cooked meat
4 eggs
Nonstick cooking spray
1 pound asparagus, steamed
Place medium cast-iron skillet over medium heat. Melt 2 tablespoons butter. Stir in flour, mustard; cook until bubbly. Gradually stir in milk; cook, stirring constantly, until thick, smooth. Stir in cheese until it melts, sauce is smooth. Taste, adding salt, pepper, nutmeg as needed. Stir in chicken; remove from heat. Make 4 indentations in sauce, break egg in each. Lightly spray eggs with nonstick cooking spray. Bake uncovered for 15 to 20 minutes in 375-degree oven. Serve with steamed asparagus.
Yield: Serves 4.
