This tasty-looking recipe is from “The Treats Truck Baking Book: Cookies Brownies & Goodies Galore,” by Kim Iwa (William Morrow, $21.99).

Chocolate Cookies

2 cups flour

1 cup plus 1 tablespoon unsweetened cocoa powder

1¾ cups sugar

3/8 teaspoon baking soda

½ teaspoon salt

2 sticks plus 2 tablespoons butter

5 tablespoons milk

1½ teaspoons vanilla

Preheat oven to 350 degrees. Line baking pans with parchment.

In a large bowl, combine flour, cocoa powder, sugar, baking soda and salt. Add butter and mix until dough forms. Add milk and vanilla and mix until dough is smooth. Mold dough into a roll and wrap in plastic wrap and refrigerate for at least 30 minutes. Roll ¼-inch thick. Cut into cookies with cutters. Place 1-inch apart on cookie sheets. Bake 8 to 10 minutes.

Yield: About 40 cookies.
