This is a great way to use you meat leftovers.

Spiced Chicken and Ham Spread

1 cup coarsely chopped cooked chicken

1 cup coarsely chopped cooked ham

1 tablespoon minced sweet pickle

1 tablespoon grated lemon rind

4 tablespoons (½ stick) butter, softened

1/8 teaspoon grated nutmeg

Salt and freshly ground black pepper to taste

Tabasco sauce to taste

Run meat through grinder or food processor. In bowl, combine with pickle, lemon zest. Add butter, nutmeg, salt, pepper, Tabasco; mix until well-blended, smooth. Cover with plastic; chill about 30 minutes. Serve on thin rounds of rye bread or crackers.

Yield: About 2½ cups.

Approximate nutritional analysis per 2 tablespoons: 46 calories, 3 grams fat (2 grams saturated), 134 milligrams sodium, no carbohydrates, 3 milligrams calcium, 4 grams protein, 16 milligrams cholesterol, no fiber.
