The dry rub for meat makes for a tasty crust.

Sweet and Spicy Roast Pork

¾ pound pork tenderloin

2 teaspoons ground cumin

2 teaspoons ground coriander

1/8 teaspoon cayenne

2 tablespoons brown sugar

Vegetable oil spray

Salt, freshly ground pepper

Heat broiler. Line baking sheet with foil. Remove visible fat from pork. Mix cumin, coriander, cayenne, sugar in bowl. Spray pork on all sides with oil. Roll in spice mixture, pressing mixture into pork. Place on baking tray. Broil 6 inches from heat for 10 minutes. Turn pork, broil 5 more minutes, until internal temperature reaches 145 degrees on meat thermometer. Set aside to rest 5 minutes before slicing.

Yield: Serves 2.
