Here’s a different twist on an old favorite.

Banana Cake

7 eggs (whites, yolks separated)

1½ cups sugar

¾ cup potato starch

2 medium to large mashed bananas

½ cup chopped walnuts

Preheat oven to 350 degrees. In large, grease-free bowl, whip egg whites until almost stiff peaks form. In another bowl, mix yolks, sugar until pale yellow. Add potato starch, bananas. Gently fold into whites, being careful not to deflate them. Fold in nuts. Transfer mixture to ungreased 10-inch tube pan. Bake on lower rack of oven 50 to 60 minutes. Cake will be brown on top, should spring back when you touched lightly. Once baked, turn pan upside down on rack, allow cake to cool.

Yield: 16 slices.

Approximate nutritional analysis per slice: 175 calories, 23 percent of calories from fat, 5 grams fat (1 gram saturated), 31 grams carbohydrates, 3 grams protein, 31 milligrams sodium, 92 milligrams cholesterol, 1 gram fiber.
