CHEF JEFF — ONE BYTE AT A TIME: Cheese Pie

This versatile dish can be served for breakfast, brunch or dessert.

Cheese Pie

1 9-inch pie shell, unbaked

1 pound cottage cheese, small curd

2/3 cup sugar

1 cup milk

2 eggs, beaten

1 tablespoon melted butter

3 tablespoons cornstarch

1 teaspoon vanilla

1 teaspoon lemon juice

¼ teaspoon salt

Cinnamon for dusting (optional)

Prepare a standard 9-inch pie shell. Cream cottage cheese and sugar; slowly add milk, beaten eggs, melted butter, cornstarch, vanilla, lemon juice and salt.

Pour into unbaked pie shell and bake at 400 degrees for 10 minutes. Reduce heat to 350 degrees and bake until knife inserted in center comes out clean, 30 to 50 minutes. Cool completely before serving.

Yield: Serves 6 to 8.
