CHEF JEFF — ONE BYTE AT A TIME: Lazy Day Cobbler

Don’t wait for a special occasion to make a dessert such as this.

Lazy Day Cobbler

½ cup (1 stick) butter or margarine

1 1/3 cups granulated sugar, divided

1 cup all-purpose flour

1½ teaspoons baking powder

¼ teaspoon salt

¾ cup milk

1 14½-ounce can pitted sour cherries, drained

Preheat oven to 350 degrees. Place butter in 2-quart casserole. Put dish in oven until butter melts. Remove from oven. In bowl, beat 1 cup sugar, flour, baking powder, salt, milk to make smooth batter. Pour over butter; don’t stir. Pour cherries over batter; sprinkle with remaining 1/3 cup sugar. Bake 40 to 45 minutes or until golden brown.

Yield: Serves 8.

Approximate nutritional analysis per serving: 325 calories, 12 grams fat (8 grams saturated), 35 milligrams cholesterol, 3 grams protein, 52 grams carbohydrates, 39 grams sugar, 1 gram fiber, 190 milligrams sodium, 55 milligrams calcium.
