CHEF JEFF β€” ONE BYTE AT A TIME: Gratineed Cauliflower

This would make an excellent side dish for grilled salmon.

Gratineed Cauliflower

4 cups cauliflower florets

ΒΌ cup plain dry breadcrumbs

1 tablespoon shredded sharp Cheddar cheese

1 teaspoon olive oil

Salt and freshly ground black pepper

Cut florets off of firm head of cauliflower. Place in vegetable steamer over boiling water. Steam 5 minutes or place in microwave-safe dish without water, microwave on high for 5 minutes. Place florets in casserole dish with heads turned up. Mix breadcrumbs, cheese, olive oil together well. Toss with salt, pepper to taste. Sprinkle over top of cauliflower; place under broiler for 2 to 3 minutes or until cheese, breadcrumbs are golden brown.

Yield: Serves 2.

Approximate nutritional analysis per serving: 138 calories, 30 percent of calories from fat, 4.6 grams fat (1.3 grams saturated), 4 milligrams cholesterol, 6.6 grams protein, 20.2 grams carbohydrates, 5.6 grams fiber, 181 milligrams sodium.
