This recipe comes from “Ruby’s Juke Joint Americana Cookbook,” by Grammy-nominated Ruby Dee.

Lamb Burgers

2 tablespoons currants

2 tablespoons pine nuts

1 teaspoon minced parsley leaves

1 teaspoon minced mint leaves

1 teaspoon lemon zest

1 teaspoon lemon juice

2 garlic cloves, chopped

1½ pounds ground turkey

Salt and pepper to taste

½ teaspoon ground cumin

½ teaspoon ground cinnamon

½ teaspoon curry powder

Place currants, pine nuts, parsley, mint, lemon zest, juice, garlic in food processor; pulse to form loose paste. Place lamb in bowl; add paste, remaining spices. Blend by hand. Form 6 patties; grill over medium heat for 5 minutes on each side.

Yield: Serves 6.

Approximate nutritional analysis per serving: 343 calories, 76 percent of calories from fat, 29 grams fat, 83 milligrams cholesterol, 19 grams protein, 1 gram carbohydrates, no fiber, 70 milligrams sodium.
