Oatmeal Date Chocolate Cookies
6 tablespoons unsalted butter
¾ cup packed light brown sugar
1/3 cup all-purpose flour
1/3 cup whole wheat flour
¾ teaspoon baking soda
1½ cups old-fashioned oats
½ teaspoon salt
1 egg, beaten
1 teaspoon pure vanilla extract
1 cup chopped, pitted dates
3 ounces coarsely chopped bittersweet chocolate
Heat oven to 350 degrees. Melt butter in saucepan over low heat. Remove from heat, stir in sugar until smooth. Mix flours, baking soda, oats, salt in bowl. Mix butter mixture with dry ingredients. Add egg, vanilla, dates. Fold in chocolate. Drop by tablespoon onto greased cookie sheets. Bake 12 minutes, until tops are dry to touch. Cool on wire rack.
Yield: 32 cookies.
