This recipe comes from at Swiss chef at one of the more prestigious restaurants in New York City.

Granola

2¾ cups rolled oats

1 cup shelled pistachios

1 cup unsweetened coconut chips

1/3 cup pumpkin seeds

Kosher salt to taste (optional)

½ cup light brown sugar

1/3 cup maple syrup

1/3 cup extra-virgin olive oil

¾ cup dried sour cherries

Heat oven to 300 degrees. In large bowl, mix oats, pistachios, coconut chips, pumpkin seeds, salt. In small saucepan set over low heat, warm sugar, syrup, olive oil until sugar has just dissolved. Fold liquid into oat mixture, making sure to coat dry ingredients well. Line large rimmed baking sheet with parchment paper. Sspread granola over it. Bake until dry, lightly golden, 35 to 40 minutes, stirring granola a few times along way. Remove granola from oven, mix in dried sour cherries. Allow to cool to room temperature before transferring to storage container.

Yield: About 6 cups.
