CHEF JEFF — ONE BYTE AT A TIME: Super Easy Beef Chili

With only six ingredients, this entree is easy to make.

Super Easy Beef Chili

1 tablespoon canola oil

1 large onion, peeled, chopped

1½ pounds ground beef

2 cups bloody Mary mix

2 14-ounce cans diced tomatoes with green chilies

2 14-ounce cans kidney beans, drained and rinsed well

4 tablespoons chili powder, divided

In medium pot, heat oil. Add onion. Saute until it becomes lightly golden brown. Add beef; cook until brown. Stir in bloody Mary mix. Heat on medium-high, stirring, scraping up browned bits on pan’s bottom. Add tomatoes, beans, 2 tablespoons of chili powder. Stir. Bring to boil; reduce heat to simmer. Cover slightly, simmer 30 minutes. Before serving, stir in remaining chili powder. Serve with desired toppings.

Yield: Serves 8.

Approximate nutritional analysis per serving: 366 calories, 32 percent of calories from fat, 13 grams fat (4 grams saturated), 31 grams carbohydrates, 32 grams protein, 647 milligrams sodium, 72 milligrams cholesterol, 9 grams fiber.
