CHEF JEFF — ONE BYTE AT A TIME: Quick Barley and Green Beans

This crunchy and unusual side dish would go well with pork.

Quick Barley and Green Beans

1 cup water

½ cup quick-cooking pearl barley

½ pound fresh, trimmed green beans (about 2 cups)

½ tablespoon olive oil

Salt and freshly ground black pepper

Bring water to a boil in a medium-size saucepan over high heat. Add barley and lower heat to medium. Cover and boil 5 minutes. Add green beans and continue to cook, covered, 5 minutes. Remove from heat and let stand 5 minutes. Add olive oil and salt and pepper to taste. Mix well.

Yield: Serves 2.

Approximate nutritional analysis per serving: 190 calories, 4 grams fat (less than 1 gram saturated), no cholesterol, 6 grams protein, 35 grams carbohydrates, 7 grams dietary fiber, 2 grams sugars, no sodium.
