This entree is a quick fix.

Pork with Apple Butter Sauce

Olive oil spray

¾ pound butterflied, boneless, center-cut pork loin chops

2 teaspoons dried rosemary

Salt and freshly ground black pepper

¼ cup apple butter

2 teaspoons horseradish

Heat medium-size nonstick skillet over medium-high heat. Spray with olive oil. Remove fat from pork, sprinkle with rosemary. Press rosemary into chops on both sides. Add to skillet, brown 2 minutes. Turn, brown second side 2 minutes. Sprinkle cooked side with salt, pepper to taste. Lower heat to medium low, cover, cook 2 minutes. Meanwhile, mix apple butter, horseradish. Place chops on individual dinner plates; pour pan juices on top. Serve apple butter on side.

Yield: Serves 2.
