This classic cookie is delicious, crisp, thin and infinitely versatile.

Oatmeal Lace Wafers

1 egg, beaten

1 cup rolled oats, uncooked

1 cup sugar

½ cup (1 stick) butter, melted

3 tablespoons all-purpose flour

½ teaspoon baking powder

½ teaspoon salt

½ teaspoon vanilla

Heat oven to 350 degrees. Mix together all ingredients. Cover cookie sheet with aluminum foil, bright side up. Coat with butter or vegetable oil spray. Drop batter by rounded teaspoonful, 4 inches apart, onto foil. Bake for 8 to 10 minutes, until golden brown. Slide aluminum foil off cookie sheet. Let cool 5 minutes before removing cookies.

Yield: About 3 dozen cookies.

Approximate nutritional analysis per cookie: 66 calories, 40 percent of calories from fat, 3 grams fat (1.7 grams saturated), 12 milligrams cholesterol, 1 gram protein, 9 grams carbohydrates, 0.5 grams fiber, 62 milligrams sodium.
