Dish up a little romance today with this tasty recipe.

Mixed Greens Salad with Blue Cheese

½ cup extra-virgin olive oil

¼ cup balsamic vinegar

Salt and freshly cracked pepper to taste

1 9-ounce bag bag mixed greens

¼ cup blue cheese crumbles

In a glass bowl, whisk together the oil and vinegar. Season with salt and pepper. The flavors should be balanced. If it tastes too acidic, add more oil a little at a time. If the dressing is too bland, add more vinegar a little at a time. Refrigerate until ready to use.

Toss the greens with the dressing, divide between 2 salad plates and garnish with blue cheese.

Yield: Serves 2.
