Deli-Style Coleslaw
1 medium (about 1 pound) cabbage
1 green bell pepper
1 medium onion
¼ cup vegetable oil
¼ cup vinegar
¼ cup sugar
Salt and pepper to taste
Shred the cabbage very fine; you should have about 4 cups. Slice onion and bell pepper into very thin slices. Combine oil, vinegar and sugar in a lidded jar; shake well to mix. Pour over the slaw mixture and toss to blend.
Yield: Serves 8 (½ cup servings).
Approximate nutritional analysis per serving: 122 calories, 48 percent of calories from fat, 6.9 grams fat (0.9 grams saturated, 1.9 grams monounsaturated), no cholesterol, 1.7 grams protein, 14.9 grams carbohydrates, 3.3 grams fiber, 22 milligrams sodium.
