This would make a nice side for salmon.

Chinese Noodles with Snow Peas

¼ pound Chinese noodles

¼ pound fresh snow peas, trimmed

2 teaspoons sesame oil

Salt and freshly ground black pepper

Bring a large pot of water to a boil. Add the noodles and snow peas. Let boil 2 minutes and drain. Toss with the oil and salt and pepper to taste.

Note: Broccoli florets can be substituted for snow peas.

Yield: Serves 2.

Approximate nutritional analysis per serving: 283 calories, 23 percent of calories from fat, 7.2 grams fat (1.3 grams saturated, 2.5 grams monounsaturated), 48 milligrams cholesterol, 9.7 grams protein, 45 grams carbohydrates, 3.4 grams fiber, 15 milligrams sodium.
